Alfajor comes from the Arabic word al-fakher, which means “luxurious.” In my opinion, these sandwich cookies are truly luxurious when it comes to taste.
The ingredients and structure of confections called alfajor in Spanish-speaking countries vary. In South America, the most common alfajor is two round cookies with dulce de leche in between them.
I admit that I have a weakness for the white chocolate-coated alfajores that I was introduced to in Argentina.
