Chajá is the name of an Uruguayan bird. Their feathers make them appear very large, but they actually have very small bodies. A similar structure applies to the dessert that was named after the bird. While chajá looks very heavy and overwhelming with its layers of sponge cake, whipped cream, meringue, peaches, and dulce de leche, it’s actually very light.
